At checkout, you’ll see automatically-calculated shipping options based on your order date and delivery address:

  • If you live within NY or NJ you’ll receive free UPS Ground shipping on orders of $250 or more, for other areas, shipping price will be rated at checkout.
  • If you live beyond our ground transit range, your order can ship UPS 2nd Day Air or UPS Next Day Air. Shipping price will be rated at checkout.
  • Our shipping deadline is 2pm ET.
  • We ship 2-day orders Monday-Wednesday, and 1-day orders Monday-Thursday. Orders placed after 2pm ET on Thursday will ship the following week.

How to defrost your delivery

THE FRIDGE METHOD

Place your vacuum-sealed package in the refrigerator on a dish. It will take about 24hrs for 5lbs to defrost completely.

THE COLD-WATER METHOD

Completely submerge your vacuum-sealed package in a cold water bath or under cold running water. Allow about 30 minutes per pound for it to defrost quickly, evenly and safely this way.

Refreezing: From a taste perspective, we don’t love the idea of defrosting and refreezing proteins. But as long as it has never dipped above 40°F, it is technically safe to refreeze meat and poultry within 3-5 days and fish within 2 days.

Meat, poultry and fish should never be left on a counter to defrost.

How fresh food is frozen?


Unless you live on a ranch, your food is almost certainly frozen at some point before it reaches you: there’s simply no other way to preserve its freshness and safety as it travels long distances.

  • But not all freezing is created equal. In the typical supply chain, proteins can be frozen over the course of many hours. This allows their cells to expand slowly, creating the ice crystals you’re familiar with from your home freezer and altering the natural tastiness of the food.

    Food may then be handled by multiple distributors, switching between warehouses, loading docks and vehicles, often partially thawing between freezers.

  • Slower freezing, more refreezing, higher loss of prime quality taste. At Marble & Grain, we ensure your food is blast-frozen at the point of origin, which drastically reduces the time it takes to go from room temperature to fully frozen.

    From the butcher shop, we bring it directly to our warehouse freezers, then pack and ship it to your front door, maintaining its temperature consistency and taste profile all along.

How fresh food is frozen?

Food so good there’s a weight list

Each piece of meat is hand-cut to bring you the optimal flavor in every ounce. We list an approximate weight for each item and then calculate the final price once we fulfill your order. Our butchers make sure to select cuts that are within 15% of the weight estimate, but you will only be charged for the actual weight delivered.

Items that are charged based on variable weights will list the price per pound of the product. Pantry items, dairy products, and proteins that do not list price per pound have fixed prices that will not change.

First Order Confidence

What if I don’t love my first order?

We stand behind your first Marble & Grain order. If it doesn’t meet your standards, contact us and we’ll make it right.

What does “If it doesn’t make the cut, we’ll make it right” mean?

It means your first order should not feel like a gamble. We carefully select, pack, and deliver our meat but if the experience falls short, we’ll work with you to fix it.

Why should I trust ordering meat online?

Because our process is built for premium meat delivery: selected carefully, flash frozen at peak quality, packed properly, and shipped to preserve the product from source to table.

Delivery

When will my order arrive?

We deliver Monday through Friday. You'll see your earliest available delivery date at checkout, or you can select a future date if you'd prefer. 

Can I get it before Shabbos?

Yes,  for our 1-day zones, order by Thursday at 2pm, and for our 2-day zones, order by Wednesday at 2pm. We recommend ordering earlier in the week to allow for a safety cushion whenever possible, especially before Shabbos, Yom Tov, or a specific event. 

Do I need to be home?

No. Your order can be delivered to your door, but we recommend tracking it and bringing it inside as soon as possible.

What if the box sits outside?

Your order is packed to withstand transit, but we recommend bringing it in as soon as you can. If the meat is still frozen or cold to the touch, place it in the freezer or refrigerator. If something seems off, please contact us. 

Is there a delivery fee?

We offer free delivery in some areas, please check our shipping policy page for details. All delivery fees will be shown at checkout before you place your order.

Is the meat fresh or frozen?

Marble & Grain meat is flash frozen at peak quality and shipped frozen or safely cold.

Why flash frozen?

Flash freezing helps lock in freshness, flavor, texture, and juiciness at the right moment, instead of letting quality fade during transit or storage.

Isn’t fresh better than frozen?

Not necessarily. Properly flash-frozen meat preserves quality extremely well,  it's frozen at peak condition and only thawed when you're ready to cook.

How should I store it?

Place it in the freezer as soon as it arrives. When ready to cook, thaw slowly in the refrigerator or in cold water.

What is your marbling system?

Marble & Grain uses its own independent quality evaluation focused on marbling, consistency, and eating experience. It is an added layer of selection beyond standard labels.

Where does your meat come from?

We work with carefully vetted ranchers and suppliers, including selected local ranchers and highly vetted international ranchers who consistently meet the standards our customers expect.

Is this restaurant-grade meat?

That’s the goal: premium kosher meat with better sourcing, better marbling, better texture, and a more elevated eating experience at home.

Why does it cost more than regular kosher meat?

Because the sourcing, selection, kosher processing, flash freezing, packaging, and delivery are all part of a higher-quality process. The goal is not to be the cheapest. The goal is to be worth it.

No. Marble & Grain orders are one-time purchases unless a subscription or recurring option is clearly selected.
