Our artisan butchers cut this lean and versatile steak from the shoulders of our American-raised Black Angus beef, and net it carefully so that it cooks evenly. We recommend leaving the netting on and removing it as you slice. Shoulder Roast is a classic 'roast beef' option -- cook it whole, let it cool, and then slice thinly for bright, tender sandwiches or crostini. Since this roast is so lean, we like to cook it at a low temperature to keep it from drying out, but here's the thing: you can braise this one like a first-cut brisket, or roast it like a Chuck Eye Roast in a low, dry oven. About This Cut

This cut comes from the Shoulder primal, which is the leanest part on the animal. A lof ot different muscles make up this primal, so you'll see it cut into a variety of meats including London Broils (from the more tender parts) and Beef for Stew (from the less tender sections). This primal is characterized by a brighter, almost mineral flavor, and the cuts that are marbled will have finer marbling than the chuck or plate.
